Summer in a bowl

Ingredients:
Large handful of green, yellow and purple pole beans from
mactavish's garden
Yellow and red heirloom tomatoes from the farmers market
Lemon cucumber from
mactavish's garden, peeled
Fresh basil from my garden
Blood orange-infused extra virgin olive oil (Farmer Joe's)
Rice vinegar
Salt and pepper to taste
--Steam pole beans until tender but still crunchy. I love my microwave for this. While they are steaming:
--Cut tomatoes and cucumbers in small chunks.
--Whisk oil, vinegar, salt, pepper in large bowl. Add tomatoes and cukes and toss.
--Mince basil, add to the mix.
--While the beans are still hot, halve them and add them to the bowl. Toss gently. The hot beans will absorb the vinaigrette quickly and will warm the salad.
--Taste. Moan with delight. Adjust seasonings. Send thank-you vibes to
mactavish and to the god of tomatoes.
--Enjoy.
