[from dinner Friday night]

Ingredients:

Large handful of green, yellow and purple pole beans from [livejournal.com profile] mactavish's garden
Yellow and red heirloom tomatoes from the farmers market
Lemon cucumber from [livejournal.com profile] mactavish's garden, peeled
Fresh basil from my garden
Blood orange-infused extra virgin olive oil (Farmer Joe's)
Rice vinegar
Salt and pepper to taste

--Steam pole beans until tender but still crunchy. I love my microwave for this. While they are steaming:
--Cut tomatoes and cucumbers in small chunks.
--Whisk oil, vinegar, salt, pepper in large bowl. Add tomatoes and cukes and toss.
--Mince basil, add to the mix.
--While the beans are still hot, halve them and add them to the bowl. Toss gently. The hot beans will absorb the vinaigrette quickly and will warm the salad.
--Taste. Moan with delight. Adjust seasonings. Send thank-you vibes to [livejournal.com profile] mactavish and to the god of tomatoes.
--Enjoy.

Yum. :^D

BTW, I dropped a note in Min's journal, saying that you'd be visiting Chicago in Sept. He's [livejournal.com profile] worldofmin02. I think you'll get along just swimmingly. Enjoy!
